One of the most important things to do before Baby arrives is to prepare and freeze some easy-to-reheat meals.

Freezer meals will make your postpartum period so much easier!

Cook

If you’re all alone, expect this to take all day. Lay everything out and don’t forget to label all the containers. And, of course, seal everything well.

  • 1 cup uncooked brown rice
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 20 oz lean ground beef
  • Green pepper,chopped
  • 1-2 tsp fresh lime juice
  • 2 T Chili Powder
  • 1 tsp Oregano
  • ½ tsp Thyme
  • 2 tsp cumin
  • 1/3 cup Cilantro, chopped
  • 1 cup Shredded Cheddar Cheese
  • 1 (15 oz) can tomato sauce

Instructions

  1. Spray a baking dish with cooking oil and set it aside.
  2. Cook rice and set aside.
  3. Preheat oven to 350Degrees
  4. In a pan, saute onion, garlic and jalapenos for 1 minute over high medium heat.
  5. Add beef and cook for at least 5 minutes then add pepper.
  6. Cook until meat is no loner pink about 3 more minutes
  7. Add lime juice and season to taste
  8. Take the pan off the cooker
  9. Add the pre-cooked rice, tomato sauce and 1/4 cup of cheese to the skillet and stir to mix well.
  10. Pour the mixture in the pre-oiled baking tray.
  11. Top off with cheddar then cover.
  12. Freeze.

To Serve

Remove from freezer and cover with foil then bake for 40 minutes after which you should remove the foil and bake for a further 10 minutes until the edges start to bubble.

  • 4 cloves garlic, finely minced or pressed through a garlic press
  • ½ tablespoon dried basil
  • 8 ounces cream cheese, softened and cut into 8 pieces
  • 8-ounce jar sun-dried tomatoes, rinsed, drained and chopped
  • 2 cups milk
  • 6 ounces Parmesan cheese, grated (about 2 cups)
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt, more to taste, if needed
  • 1 cup of chicken, cooked and cubed

Instructions

  1. Melt butter in a skillet and cook garlic for about 2 minutes.
  2. Stir in Basil and add cream cheese whisking until smooth. Continue to whisk consistently. (it will first curdle then become a sauce)
  3. Stir in the pepper, salt and Parmesan cheese.
  4. Cook for about 10 minutes until the cheese is melted.
  5. Place in foil tins then cover with foil.
  6. Freeze.

To Serve

Bake while frozen at 350 degrees for 40 minutes. If it was thawed beforehand, bake for 30 minutes.

  • 2lb, grass-fed beef chuck roast, fat trimmed and cut into bite-sized pieces
  • 3 carrots, peeled and chopped
  • 2 celery ribs, chopped

Instructions

  1. Cook noodles as directed

To Serve

To Serve

Bake at 425 degrees for 15 to 20 minutes.
